Adaptogenic energy balls recipe

Reaching for a healthy snack is easy once you’ve tried these pumpkin spice energy balls boosted with ashwagandha. Pumpkin flavoured, tastes like dessert, but its healthy and adaptogenic? Yessss please.

I know energy balls have had their time and so many people have moved on from them, but they really are one of the easiest healthy snacks and there are soooo many different ways to make them. You could make a different flavour energy ball every week for an entire year and still have options.

I've tried so many different flavours and recipes over the past five years (gosh, weird to think I've been on this journey for that long!), and this is by far my favourite.

The method:

  • 1 cups rolled oats

  • 2/3 cup medjool dates

  • 1/3 cup almond butter

  • 1/3 cup pumpkin puree

  • 1 tsp vanilla extract

  • 2 tbsp ashwagandha

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp salt

  • 2 tbsp mini chocolate chips

Combine everything in a food processor except chocolate chips, blend to combine. Stir in chocolate chips then roll into balls and store in the fridge! They’ll last 1 week in the fridge, or about a month in the freezer 🫶🏻🫶🏻🫶🏻
